ELEVATE THE EVERY DAY....

Hummus with a twist

Delicious. It takes about 6 mins using leftover carrots.

Ingredients

  • 600g of leftover carrots that were roasted in 2tbs of cumin seeds

  • 1/2 tsp of turmeric powder

  • grated ginger (I keep mine in freezer about a tbs)

  • 4 tablespoons of tahini

  • 100/150 mls cold water to loosen

  • 1 can of chick peas of butter beans (rinse well)

  • Juice of one lemon

Method

Into the blender, chickpeas, tahini, ginger, lemon juice, garlic, and most of the carrots and blend till smooth.

Blend, add a little water, blend add water and keep scraping down the sides until you get your consistency.

Out it comes, put a few carrots on top some fresh parsley and a little extra virgin olive oil if you want.
